Holiday of Elena pork ham is comming!

Every year at the end of October the locals organize the Festival of Elena pork ham -one event full of emotions with rich folklore program, competitions, games and reproductions. It will be held on the 26, 27 and 28-th of October.
Guests of the holiday will have the opportunity to taste the unique taste of the Elena's pork ham, and will also be able to eat from the traditional Elena dishes, thoroughly prepared by the hosts of the feast. There will be demonstrations of old crafts and all this will be accompanied by a colorful folklore program.
Elena pork ham is a delicacy - salted and dried pork ham, prepared only in the region of the town of Elena. Elena pork ham has an unique taste and can be stored for several years. It is preparedin the conditions of specific climatic factors in Elena region. The technology of preparation is simple and there are no secrets.
The technologiesfor storageare different. In the past, the legs were placed in corn flour or covered with lime milk. Sometimes are used specially tailored for the purpose bags of cheesecloth or wooden containers with thick networks instead of walls ("muharnitsi"), placed in a ventilated place where the clean mountain air to finish the job of drying of the meat.
Traditions in the preparation and storage of Elena pork ham are mostly family and not regional, and even in a few neighboring houses on the same street may occur serious "technological" differences.
But it is guaranteed that this "delicacy" is very delicious.
